McCall Cabernet Franc
A few weeks ago, back in my hometown of Cutchogue NY, I was able to stop by McCall winery. My original plan was to participate in the wildly popular burger night. McCall has the unique distinction of not only being a winery but also as a ranch where they raise Charolais cattle. This is a specific breed that hails from France. They sell all the meat in the winery, and on Friday nights they have burger night featuring beef from their own cattle. Unfortunately, I underestimated how popular the event was and the extent of my visit was a drive through the parking lot. I did return the next day during the off hours. With less of a crowd to battle, I was able to procure myself some beef short ribs from their freezer and a Cabernet Franc to go with them.
The McCall Cabernet Franc has aromas of tart cherry and spice. There is a balanced amount of oak that adds a beautiful but not overpowering layer of flavor.
The short ribs were sublime. I made them in the slow cooker and served them with pearled onions and truffle butter mashed potatoes. I know, drool!
