Sip a little, relax a lot

Cantina Valpolicella Negrar Appassimento Rosso

Let’s just take a minute to explain why this wine is a bit different from others you might be drinking.  In short, the appassimento method uses dried grapes prior to fermentation.  Using this method ensures that the wine is age-worthy and full of deep concentrated flavors such as dark chocolate, ripe berry, and prune.  This process is used to produce the famed Amarone wines.  Amarone is usually at a much higher price point with decent bottles in the $75 to $100 range.  So now for an Amarone fix without breaking the bank we have this stand-in for less than $20.

This wine was supple and well rounded with notes of fig, chocolate, and coffee.  It starts out with a silky texture then hits you with a bit of acidity.  Give this wine some special attention.  Pick a night when you have some time to relax.  Grab a blanket, light a candle and put on that movie you have been wanting to see.  Hit up Pinterest for inspiration for a great cheese and charcuterie plate to make for while you watch the movie.  Curl up, and enjoy.
